Ekaete aka Laura Crave will have us craving for her pancakes made with bean flour or what she calls “Pankara” and her take on the American Southern fried chicken served with her home made sweet chili sauce.
Recipe for Pankara
Pankara (2 cups of beans flour)
1 egg
Tbs. baking powder
Half-cup flour
Water
Salt
Seasoning cubes
Instructions
Mix the dry ingredients together.
Create a well in the center, add your egg and water till you get a semi thick batter similar to the regular pancake batter.
Heat your non-stick fry pan.
Add a little oil, pour batter in one fluid motion don’t try to spread the batter in the pan. Allow to cook till you get little air pockets on the surface of the batter, then flip to the other side, using a flat frying spoon. Allow to cook for a minute.
Remove from the fire…
Place on some kitchen towels to drain some of the excess oil.
Your panakara is ready!!!
Recipe for Southern Fried Chicken
Ok… southern fried chicken.
5-6 Chicken pieces
2 cups of buttermilk
Onions
Garlic
Black pepper
Seasoning cubes
3 cups of flour
Black pepper
Salt
Chili powder
2 eggs
1 TBS of water
Instructions
Put everything in a bowl and marinate overnight in the fridge.
Get a Ziploc bag; add 3 cups of flour, black pepper, seasoning cubes, salt, garlic & onions powder
Add some chili powder to o(this is for your seasoned flour that you would drench your chicken pieces in) get a bowl and crack 2 eggs in.
Add some salt, pepper & seasoning cubes to taste with one tablespoon of water and whisk it all up. We’re adding the water to loosen the egg mix a bit.
In a non-stick deep pot, frying pan or an electric fryer, add some vegetable oil about half way of your cooking pot…heat it on high.
Heat till the oil is really hot then reduce the heat to medium…we want to ensure the chicken cooks thoroughly and not just fries on the surface .
Get your chicken pieces from your buttermilk mix. Dry them a bit with kitchen paper.
Dunk them in your seasoned flour till well coated, shake off excess flour, and then dip them one at a time in the egg mix. Remove, and then dunk again in your seasoned flour mix.
Shake off excess flour. Allow to stand for a minute, then put your chicken pieces carefully into the hot oil (deep frying).
Fry for 15 minutes on both sides till chicken is golden brown and the juices are clear.
Remove from the heat and drain off excess oil on a kitchen towel.

Garlic
Ginger
Chopped onions
Water (half cup)
Seasoning cubes and salt to taste
Instructions
In a pan, add some oil and allow to heat for a bit. Then add your onions and fry till translucent.
